Winters in Bordeaux are short and in general the climate overall is temperate. The long hot summers help the growing seasons and contribute to the sugar content of cabernet reserve wines. Humidity in the region can be on the higher side since it is located close to the estuaries of the Dordogne, Garonne and Gironde rivers nearby. The wine areas and vineyards of Bordeaux are divided into five distinct regions. This creates 57 appellations. This system of Appellation d’Origine Contrôlée (AOC) in France is used to distinguish the different wines. It is applied to a defined region in which the manner in which wines are produced, labeled and sold so that the process is very strictly regulated for Bordeaux red wine.
Many of the cabernet wines from the Bordeaux region have aged extremely well. Some of them have developed greatly over 5 to15 years and some will produce excellent drinking. Some of them will last as much as 50 years after bottling. With so many very good wines from the area it is tempting to open up a bottle as soon as you get your hands on one. But many people will say that the fine wines from Bordeaux can get even better if they are aged properly.
